๐ฑ Kitchen Monk SOS-Free Adaptation โ Not Yet Kitchen-Tested
๐ฝ๏ธ Makes: 4 servings, about ยผ cup each (VA’s stated yield; our oil-free version hasn’t been measured yet). โฑ๏ธ About 10 minutes hands-on, 30 to 40 minutes in the oven.
๐งบ Ingredients
- 1 can (15 oz) chickpeas, no salt added, drained and rinsed (about 250 g drained)
- 1 lemon: 1ยฝ tsp finely grated zest and 1 tbsp juice
- 1 tsp sweet or smoked paprika
- ยฝ tsp garlic powder (not garlic salt)
- ยฝ tsp dried thyme
- ยผ tsp ground black pepper
๐ฉโ๐ณ Steps
- ๐ฅ Heat the oven to 400ยฐF. Line a rimmed baking sheet with parchment paper or a silicone mat (no oil or cooking spray).
- ๐งป Spread the drained chickpeas on a clean kitchen towel and pat them until completely dry. Drier beans get crunchier. Rub off any loose skins if you like.
- ๐ซ Spread the plain chickpeas in a single layer on the pan and roast for 20 minutes, shaking the pan once halfway.
- ๐ While they roast, stir the lemon juice, lemon zest, paprika, garlic powder, thyme, and pepper together in a large bowl to make a loose paste.
- ๐ฅฃ Tip the hot chickpeas into the bowl and toss until coated. The lemon juice does the job the oil did, helping the spices stick.
- โฒ๏ธ Spread them back on the pan and roast another 10 to 20 minutes, shaking once or twice, until golden and dry on the outside. Watch closely near the end so the spices don’t scorch.
- ๐ฌ๏ธ Let them cool on the pan. They crisp up more as they cool.
๐ What we changed, and why
- No olive oil. The original tosses the beans in 1 tbsp oil. We use parchment and a spoonful of lemon juice instead, and add the seasoning partway through so the wet coating doesn’t keep the beans from drying out.
- No added salt. The original uses ยผ tsp salt. We leave it out and lean on lemon, paprika, and garlic, and we use no-salt-added canned chickpeas.
- Two-stage roasting. Our change, not VA’s. Because this version is untested, roasting times are our best estimate. Ovens vary, so go by color and crunch.

๐งฎ How we calculated this: 250 g drained, rinsed canned chickpeas (our estimate for one 15-oz can; weigh yours for accuracy) ร USDA FoodData Central values per 100 g for canned chickpeas, drained and rinsed (FDC 173801): 138 kcal, 7.0 g protein, 2.5 g fat, 22.9 g carbohydrate, 6.3 g fiber. Batch: about 345 kcal, divided by 4 servings. Fiber calories are not subtracted. The lemon juice, zest, and spices (together under 25 g) are not included. Sodium is pending because USDA’s entry is for regular salted canned chickpeas, which doesn’t fit a no-salt-added can; check your can’s label. Roasting removes water but not nutrients from the batch, so per-serving values stay the same. These are estimates, not lab results.
๐ท๏ธ Ingredients and allergen notes
Chickpeas are legumes. None of the ingredients listed is one of the nine major U.S. food allergens, but check your spice and can labels for shared-facility warnings. Entirely plant-based, with no added oil, salt, or sweeteners. Not “sodium-free” or “fat-free”: chickpeas naturally contain small amounts of both.
๐ซ Storing
VA’s original notes say its oil-roasted chickpeas keep up to 5 days in an airtight container at room temperature. Oil-free chickpeas may soften sooner, so they’re best the day you make them. If they go soft, re-crisp them on a lined pan at 400ยฐF for a few minutes. Keep leftover zested lemon in a bag in the fridge for up to a week.
