🌲 Honorary EVERgreen Guardian™ of Nourishment
🔬 Dr. T. Colin Campbell
Scientist, teacher, and founder of the T. Colin Campbell Center for Nutrition Studies
🥦 “Everything in food works together to create health or disease.”
🌱 Why we honor him
Kitchen Monk’s first food rule, whole-food, plant-based, and SOS-free, rests on the work of people like Dr. Campbell. For more than 60 years he has asked how food shapes health, and he has shared what he learned with patients, families, students, and clinicians around the world. Mother Teresa shows us compassion in action; Dr. Campbell shows us how nourishment can be an act of care.
📚 His life’s work, briefly
🎓 Cornell University: Jacob Gould Schurman Professor Emeritus of Nutritional Biochemistry.
🌏 The China-Cornell-Oxford Project: a lead scientist on one of the largest studies of diet and disease, begun in 1983 with the University of Oxford and the Chinese Academy of Preventive Medicine.
📄 Research: more than 350 publications, most of them peer-reviewed.
📖 Books: The China Study (2005, with his son Thomas Campbell, MD), Whole (2013), and The Whole Truth (2026, with his son Nelson Campbell).
🎬 Film: featured in Forks Over Knives (2011).
🔍 A fair note: the China Project was a large observational study, and scientists continue to discuss how its findings should be interpreted. We share Dr. Campbell’s work as education that inspires us, alongside other evidence and your own care team’s advice.
