🌾 Кутя · kutia (also spelled kutya or kutia)
Chewy wheat berries with ground poppy seed, walnuts and raisins, gently sweetened with dates. Kutia holds a central place at Sviat Vechir, the Ukrainian Christmas Eve supper: some families begin the meal with it and others end with it. It is traditionally a sweet porridge of wheat (or sometimes barley or rice) with poppy seeds, nuts, dried fruit and honey. Since 2023 many Ukrainians celebrate Christmas Eve on 24 December, while some families keep 6 January. Practices and recipes vary by family, region and church, and you are welcome to enjoy this dish at any time of year.
Kitchen Monk adaptation of Ukrainian kutia. 🔄 What we changed: date purée instead of honey. It still contains natural fruit sugars, so it is “no sugar added,” not sugar-free.
🍽️ Serves 6 (about ¾ cup each; yield to be measured in testing) · ⏱️ Soak 8–12 hours · Prep 20 min · Cook 45–75 min · Cool 20 min · Total about 2 hours plus overnight soaking
🍳 Equipment: large bowl for soaking, saucepan, fine sieve, spice or coffee grinder or mortar and pestle (no-grinder method below), fork or small blender
🧺 Ingredients
- 1 cup (180 g) dry wheat berries
- ¼ cup (35 g) culinary poppy seeds, bought as a food product
- ½ cup (50 g) walnuts, chopped
- ½ cup (75 g) raisins with no added oil or sugar (check the label)
- 4 Medjool dates, pitted (or 6–8 smaller dates)
- Water: for soaking, about 5 cups for cooking, ½ cup hot water for the dates, plus a little to loosen
👩🍳 Steps
- Rinse the wheat berries, cover with plenty of cold water and soak 8–12 hours in the refrigerator. Drain.
- Put the wheat in a saucepan with about 5 cups fresh water. Bring to a boil, then simmer partly covered for 45–75 minutes, until the grains are tender and chewy and some have split open. Add water if the level drops below the grains. Drain and let cool.
- Meanwhile, pour boiling water over the poppy seeds, let stand 20 minutes, then drain well in a fine sieve. Grind them in short bursts until they look greyish and milky. No grinder? Pound them in a sturdy bowl with the end of a rolling pin for several minutes.
- Soak the dates in ½ cup hot water for 10 minutes, then mash with a fork or blend until smooth.
- Stir together the wheat, poppy seeds, walnuts, raisins and date purée. Add water a spoonful at a time until loose and spoonable.
💡 Troubleshooting: grains still hard after 75 minutes? Older wheat berries can take longer; keep simmering and checking. Poppy seeds whole and gritty? Grind or pound longer. Not sweet enough? Add one more date, puréed.
⚠️ Allergens: contains wheat (gluten) and walnuts (tree nut).
🔁 Substitutions: none tested yet. Family versions sometimes use barley or rice; we haven’t tested these.
🧊 Storing: refrigerate in a covered container and use within 3–4 days. ❄️ Plain cooked wheat berries can be frozen on their own for up to about 3 months; the finished kutia has not been freeze-tested.
