๐ฟ Our description: The easiest way to eat a rainbow: chop sweet potatoes, carrots, cauliflower, Brussels sprouts, zucchini, onion, and cherry tomatoes, add cooked chickpeas, toss everything with lemon juice, garlic, onion, and chipotle powder, and roast on parchment. Serve it over whole grains or greens. A fiber feast on one pan! ๐
